This thick, warming soup is fat-free so it makes a filling yet healthy, meal for those following low fat diet

  • 3 carrots, roughly chopped
  • 2 leeks, sliced
  • 1 small potato, roughly chopped
  • 1.2 liter vegetable or chicken stock
  • Salt and ground black pepper
  • Chopped fresh flat-leaf parsley
  • Whole grain croton and Chia seed

Put the carrort, leeks and potatoes in a large saucepan, Pour in the stock and bring to the boil. Reduce the heat and simmer for about 20 minutes, until the vegetable are tender. Process the soup in a food blender until smooth. Add salt, pepper to taste, and then pour into serving bowls. Serve with parsley and sprinkle Chia seed to make it healthier.
